Two to three nights. One day for the canonical pintxo crawl in Parte Vieja + La Concha walk, one day for Bilbao + Guggenheim, optional third for a high-end menu (one of the Michelin-starred restaurants needs a real evening). Less and the food scene gets shortchanged; more without a Bilbao or Biarritz pivot and the rhythm starts repeating.
